As a young man, Marco Ortolani dreamed of discovering the world. Today, the Italian Executive Chef and his talented team bring its flavours to the Eden Kitchen—shaping a culinary experience that embraces the standards of fine dining without the formality that so often accompanies it. Together, the team prepares around twenty à la carte dishes, complemented by a changing selection of daily specials—each one crafted in the open show kitchen using seasonal ingredients sourced locally whenever possible. «When an ingredient inspires us, we follow it back to its roots. We seek to understand where and how it grows, what influences its flavour, and the cultural significance it holds. For us, cooking isn’t about standing out—it’s about belonging. It’s about culture.»
